Title: Spiced Pear Jam

2 Kilos sweet, juicy pears,
  Peeled, cored & chopped*
2lbSugar with added pectin
  Zest of quarter of a lemon
9 Cloves
2 Heaped tsps fresh ginger,
  Chopped fine
1tsAllspice, level
1tsCinnamon, heaping

Made a batch of Spiced Pear Jam this weekend - just improvised the recipe but it came out really nice (a bit soft-set though.. would've liked it firmer but hey, you can't win 'em all, esp. not on guesswork )

* (came to about 8 cups or so?) (was nearly 2 pints of puree when poached down)

Basically poached the pears in just a tablespoon or so of water, with the zest (shredded fine) and cloves until they went soft and mushy. Mashed 'em lightly with a potato masher and measured the puree - about 2 pints. Added the spices and stirred them in well. Used a pound of sugar per pint of puree (approx). Boiled until setting point (or so I thought :) ), decanted into warm clean jars, voila.

I suspect this would benefit from a dash of something alcoholic :) Brandy maybe, or Poire William...
